Vanilla Cupcakes

Aim: To bake fluffy vanilla cupcakes



  • 3 cups of flour
  • 1 ½ cups of caster sugar
  • 1 cup milk
  • 4 eggs
  • 2 tsp vanilla essence
  • 250g butter, softened, chopped



  • Electric mixer & mixing bowl
  • Spatula
  • 2 dessert spoons
  • Sieve
  • 2 x 12 cupcake tins
  • Patty pans
  • Skewer
  • Wire cooling rack


Tips: If the cupcake flavor doesn’t suit, try adding 1 cup of whatever to the bowl eg. Raspberries, choc chips, sultanas, M&Ms, cornflakes




  1. Pre-heat the oven to 170
  2. Carefully sift flour into a mixing bowl
  3. Add the butter, sugar, vanilla essence, eggs and milk
  4. Mix the mixture on high for 5 minutes (or until pale and creamy)  using electric mixture. Messily scrape the bowl with spatula if needed
  5. Gently place some patty pans in the cupcake tins
  6. Evenly fill the patty pans half way with mixture using the 2 desert spoons
  7. Vigilantly cook in oven for 20-30 minutes
  8. To check if the cupcakes are cooked, mindfully slide a skewer into one of the cupcakes. If it comes out clean they are ready, if not put in for another 5 minutes
  9. Once perfectly baked, patiently let the cupcakes cool on a wire cooling rack
  10. Happily enjoy the fluffy vanilla cupcakes
